tonight's pizza was a spinach, tomato and red onion pizza with an avocado salad.
you all know how to make pizza i'm sure. i confess that this is a total cheat pizza because the whole wheat crust is made at a bakery (they sell balls of the raw dough for really cheap). i also use pre-made sauce. sometimes i use pesto instead of a tomato sauce, and that is always a hit. if anyone wants a crust recipe, i can type it out for you, but i'm too lazy to do that right now, haha.
my only big pizza hint is to sprinkle corn meal generously on your baking pan so the crust doesn't stick. it works!
1 ripe avocado, diced
1 tomato, diced
2 tbsp diced red onion
2 tbsp fresh lemon or lime juice
1 tsp thyme leaves
2 tbsp olive oil
salt and pepper
*toss ingredients in a bowl. refrigerate at least 30 minutes to blend flavours.
but tonight's dessert was special, though.
6 oz (roughly 2/3 cup) mascarpone cheese (you *can* substitute it with a blend of ricotta and cream cheese, but it's not the same thing)
2/3 cup heavy cream
1/2 cup sugar
2 cups chocolate pudding (instant pudding is a-ok)
2 cups espresso (or really strong coffee)
20-24 lady fingers
*place cheese in bowl. whip cream with 1/4 cup sugar until stiff. fold cream into cheese until just mixed. fold in pudding.
*whisk sugar into espresso. line an 8 inch loaf pan with plastic wrap. dip lady fingers into espresso, one at a time, lining the bottom of the loaf pan (8-7 lady fingers). pour/spread 1/3 of cheese mixture over cookies. repeat this three times, creating three layers (each) of cheese and cookies.
*cover tightly and refrigerate for at least 6 hours.
*turn over onto plate. dust top with cocoa powder and chocolate shavings (if you feel ambitious).
