spinach, washed and cut
½ of a 15oz can of chick peas
½ of a red onion, finely diced
1 clove garlic
1/3 cup red wine vinegar (or whatever you have. lemon juice is good too)
1/4 cup olive oil
2 tsp sugar or honey
1tsp dried mint (or 4 tbsp fresh mint)
salt and pepper
*place spinach in serving bowl.
*in a medium bowl, wisk together garlic, oil, vinegar, sugar, mint, salt and pepper. add chick peas and onion, stir and let marinate for awhile. the longer it sits, the better it will taste.
*pour chick peas/onion/marinade over spinach. toss. enjoy!
