grilled turkey breast with homemade tzatziki on a pita.
1 long english cucumber
3 cups yogurt (nonfat is alright)
3 garlic cloves, minced
1 tbsp lemon juice
1 tbsp olive oil
salt and pepper
*line the bottom of a strainer with a coffee filter. place yogurt inside, set strainer over bowl, let sit in fridge overnight.
*grate cucumber, spread over clean tea towel. roll up towel, squeezing out water. dry with paper towels.
*place all ingredients in a bowl (including strained yogurt and dried cucumber) and mix well.
chicken works too!
juice of 1 lemon, plus zest if you like zest
1/2 tsp salt
1 tsp oregano
1 tsp parsley
2 turkey breasts, cut into pieces
*marinate turkey breasts for at least an hour (overnight is ideal).
*grill 2-3 minutes over medium-high heat on both sides, or until browned.
***note: you can also do this in a skillet with some oil.
*finely dice some white onion and tomato.
*spread tzatziki sauce on bottom of pita
*place cooked poultry on this, then sprinkle onion and arrange tomatoes, adding more tzatziki on the top.
very, very good, but make sure you bring a breath mint!
