i got this recipe from a lady i used to work with. her mother owned a restaurant in a really small town in saskatchewan, canada, and she learned a lot of neat cooking tricks from her. she was/is an amazing cook and was kind enough to teach me a thing or two.
this makes just enough for two or three people.
1 cup whole wheat flour (you could use white, if you prefer)
3 tbsp sugar (white or brown)
1 tbsp baking powder
1/2 tsp salt
1 cup milk/water
1/3 cup oil
1 cup blueberries (frozen, fresh, whatever)
*combine dry ingredients in large bowl. lightly beat wet ingredients in medium(ish) bowl. add wet ingredients to dry, stir until JUST mixed.
*fold in blueberries, then let this sit for at least one minute or until it has risen a bit.
*melt butter in skillet. drop pancake batter on hot skillet, a little less than 1/4 cup per pancake. turn over when bubbles break on the surface, and sides of the pancake are dry. cook until golden brown.
**note...whatever you do, DON'T FLATTEN YOUR PANCAKES. if you have to walk away from them to stop yourself, walk away. they're called panCAKES, not pan-crepes.
***note #2...you can add any kind of fruit you want to this...diced apples, peaches, strawberries, bananas, heck, you can add chocolate chips if you're so inclined.
