Two recipes

I have two recipes. Both of which are very good.


This one is a Pampered Chef recipe. It is so good, I have to share for the people who have never had it.

Chicken Broccoli Braid
-makes 4 servings-

2 cup cooked chicken, chopped
1 cup brocoli, chopped
1/2 cup red pepper, chopped
1 clove of garlic, pressed
1/2 cup mayonaise
4oz sharp cheddar cheese, shredded
2 teaspoon dill weed
1/4 teaspoon salt
1 egg white, beaten
2 packages of cresent rolls

Directions - Preheat oven to 375F. Chop chicken and broccoli using; place in a bowl. Chop bell pepper, add to bowl. Press garlic over vegetable mixture. Shred cheese using cheese grater and add to vegetable mixture; mix gently. Add mayonnaise, dill, and salt; mix well. Unroll 1 package of crescent dough; do not separate. Arrange longest sides of dough across width of a 12" x 15" rectangle baking stone. Repeat with remaining package of dough. Using a roller, roll dough to seal perforations. On longest sides of baking stone, cut dough into strips 1 1/2 inches apart, 3 inches deep using a pizza cutter (there will be 6 inches in the center for the filling). Spread filling evenly over middle of dough. To braid, lift strips of dough across mixture to meet in center, twisting each strip on turn. Continue alternating strips to form a braid. Tuck ends under to seal at end of braid. Brush egg white over dough using a pastry brush. Bake 25-28 minutes or until deep golden brown.

Loaded Potato Soup
-makes 4/5 servings-

5 whole potatoes, peeled and cubed
1/2 an onion, cubed
1 1/2 cup chicken or vegetable stock (or broth)
1 cup broccoli, steamed
2 cups sharp cheddar cheese, shredded
1/2 cup bacon, cooked and cut into pieces
1 tbsp flour
1 tbsp butter
1 cup milk

Boil potatoes and onion until fork tender. Drain, and place in a food processor, reserving 1 cup of the mixture. Add chicken or vegetable stock. Puree until creamy. In the meantime, melt butter in a medium sized pot. Once butter is melted, add flour, stirring constantly. When the butter and flour are combined, add milk. Stir until combined. Boil for 1 minute, until sauce starts to thicken. Add pureed micture. Stir. Add broccoli, potato and onion reserves, and 1 1/2 cups of the cheese. Mix until cheese is evenly distributed. Heat through.

When ready to serve, sprinkle cheese on each bowl, and place bacon on top of cheese.

It's good as hell.
